Old Bay Seasoning is a very versatile blend primarily when cooking seafood. However, it is good on just about anything else as well. With a rich bold flavor it will compliment most dishes. We like read beans and rice with shrimp and scallops. When I make it quickly, I use packaged box mix of red beans and rice, and add a little Old Bay Seasoning to provide a bolder flavor.

Why Salt Free

Salt free is a choice we have made. After making the decision to go salt free or use the absolute minimum amount we soon found we didn’t miss it. As life went on it also became a decision that was supported by dietary requirements of medical conditions.

Base Recipe for Old Bay Seasoning

The following is a base recipe for Old Bay. It is provided salt free. If there is a spice or two you are not a fan of reduce the quantity. If there is one or two you really like add a little more. The recipe is a guide. To get the flavor you want it may take a little adjusting. Feel adventurous and experiment. The recipe is not an exact science.


Old Bay Seasoning – Salt Free

Old Bay Seasoning – Salt Free – Base Recipe

Ingredients
  

  • 2 Tablespoons Celery Seeds
  • 2 Tablespoons Bay Leaf: Powder
  • 1 Tablespoon Mustard: Dried – ground
  • 2 teaspoons Pepper: Black – ground
  • 2 teaspoons Ginger: Dried – ground
  • 2 teaspoons Paprika: Sweet – smoked is better if you can find it
  • 1 teaspoon Pepper: White – ground
  • 1 teaspoon Nutmeg
  • 1 teaspoon Cloves – ground
  • 1 teaspoon Allspice
  • 1 teaspoon Garlic: Granulated
  • 1/2 teaspoon Red Pepper Flakes – crushed
  • 1/2 teaspoon Mace – ground
  • 1/2 teaspoon Cardamom – See Note 1
  • 1/4 teaspoon Cinnamon – ground

Instructions
 

  • Mix all ingredients in a bowl
  • In a spice grinder, use the pulse option until desired coarseness is achieved
  • Store in an airtight container

Notes

Note 1:  If you don’t have Cardamom you can make a substitute using equal parts: cinnamon, ginger, cloves, and nutmeg.  Mix them together then add as if cardamom.

Adjust to Flavor It Your Way

You may like the recipe as it is written. A spice could come across too strong. Another that you really like may be hidden. Adjusting the recipe according to your pallet will get you to the flavor right for you. Be aware that making multiple adjustments at one time may make it difficult to determine which ones you like and don’t like. Make note of the adjustments you make so you can replicate the blend you like.
