Jamaican Jerk

Jamaican Jerk is one of my favorite flavors to have with a rice bowl. It is a combination of a lot of spices some of which may not appear to go together at first glance. None the less, the flavor created is rich and upbeat. As with most blends the spices used are common to other blends, so you probably have them in your pantry. This particular spice I make when I am going to use. it. I have the ingredients in may pantry and prefer to have this blend as fresh as possible.

Jamaican Jerk – Base Recipe

The following is a recipe you can use to create Jamaican Jerk Seasoning blend your way. Use the recipe as a starting point and then go from there. The first time make it as stated. From there adjust it to your liking.


Jamaican Jerk – Salt Free

Jamaican Jerk – Base Recipe
Servings 25 1 Teaspoon

Ingredients
  

  • 1 Tablespoons Garlic: Granulated
  • 1 Tablespoon Onion: Powder
  • 1 Tablespoon Brown Sugar
  • 1/2 Tablespoon Parsley: Dried
  • 2 teaspoons Paprika
  • 2 teaspoons Cayenne: Dried, Ground
  • 1 teaspoon Allspice
  • 1 teaspoon Thyme: Dried
  • 1 teaspoon Pepper: Black, Ground
  • 1/2 teaspoons Cinnamon: Ground
  • 1/2 teaspoon Red Pepper Flakes
  • 1/2 teaspoon Cumin
  • 1/2 teaspoon Nutmeg

Instructions
 

  • Mix together all ingredient in a bowl. Stir until well blended.
  • For a finer blend, pulse in a spice grinder as desired.
  • Store in an airtight container.

Notes

To use as a rub:
Rub the spice mix into the desired meat.  Use 1 to 1-1/2 teaspoons per serving.
For best results, marinate meat for at least an hour to allow the flavors of the rub to penetrate the meat.  Marinating longer will increase the flavor in the meat.

Flavor It Your Way

Do you think the recipe will be a flavor you like? What spice or spices do you like to taste? Are there some spices you prefer not to have in a blend? You can adjust the recipe to your pallet. If you like it a little hotter add a little more Cayenne and/or Red Pepper Flakes. If you like it very mild, leave the Cayenne and Red Pepper Flakes out. It is up to you what the final product tastes like. It will be similar to the one created by the recipe but you will be able to say, “I Flavored It My Way!”

Making adjustments

Whatever adjustments you decide to make write them down. Keeping track allows you to replicate the combinations you like. A word of advice; make one or maybe two changes at a time. Making several changes will make it hard to determine what worked and what didn’t. Having the adjustments written down will allow you to update your recipe. Once you have it the way you like it, make a minor adjustment once in a while. This will keep the flavors fresh and you may find a combination you like better.
