Create your own Cajun Seasoning blend. There are a lot of different brands out there. You can use one of the store brands or you can create your own customized blend. You can choose but I found their way was not quite my way.
Why I Did Cajun Seasoning My Way
We have avoided the use of salt as much as possible for many years. At first it was simply a matter of choice, then it became a matter of health. My husband was diagnosed with high blood pressure and we knew that eliminating salt wherever we could would help him control it.
Store Bought Blends
We have always liked to use spices liberally, but also had noticed that one of the first ingredients in any purchased spice blend was salt. After looking at the ingredients for several of the most popular Cajun blends we found salt right at the top of every list. As a result, we came to the conclusion that if we wanted to continue to enjoy the flavors of Cajun Blend without the salt we would have to make our own.
Developing Our Own Blend
I read the ingredients listed in several of the prepared brands, including our favorites. I noticed most of them had a very similar list of spices. From the list I kept the flavors I wanted and eliminated those I didn’t.
Purchase the Spices in Bulk
A local grocer sells spices in bulk. I took my list of spices and headed to get the ones I needed. Buying in bulk allows you to purchase what you need at a reduced price. Some of the spices I purchase more of because they are used in more than one of my recipes. If they are used only in one or two recipes I buy less. I always buy a little extra so I can make a quick batch if I run out.
Cajun Seasoning My Way – No Salt
It took a couple of attempts before I arrived at the base I use when making a Cajun blend. I don’t always make it the same way. I find myself adjusting a little here and there depending on the flavors, or hotness I feel like at the moment. For example: to make it hotter I add a little more cayenne pepper, or red pepper flakes. To make it milder I reduce them.
Cajun Seasoning – Salt Free – My Way
Ingredients
- 2 Tablespoons Onion: Powder
- 3 Tablespoons Paprika: Sweet, Ground
- 2 Tablespoons Garlic: Powder
- 1-1/2 teaspoons Thyme: Dried
- 2 teaspoons Oregano: Dried
- 1 teaspoon Chili Powder
- 1 teaspoon Parsley: Dried
- 1 teaspoon Peppercorns: Black, freshly ground
- 1 teaspoon Pepper: White, ground
- 1 Sml to Med Bay Leaf
- 1/2 teaspoon Red Pepper Flakes
- 1 Tablespoon Cayenne: Dried, ground (or to taste)
- 2 teaspoons Basil: Dried, ground
Instructions
- Grind all ingredients together in a spice grinder until obtaining an even, desired consistency.
- Store in a air tight container, preferably in a cool, dark area.
Making Adjustments
When making adjustments to the recipe keep track of the changes you make. Make only one, maybe two adjustments at a time. Making too many adjustments make it hard to tell what worked and what didn’t. If the you like the change update your version of the recipe. If it doesn’t work go back to your original and change something else. It would be a shame to not be able to repeat a new blend because your didn’t write down the adjustments. I learned this the hard way.
Cajun Seasoning Your Way
After looking at the recipe above, determine the changes you would make to create Cajun Seasoning your way. You don’t have to be exact in following the recipe. Add, subtract, or adjust as you see fit. The goal is to be able to say, “I Flavored It My Way!”
