This Fast Rising Rolls recipe is very versatile. I use it to make large delicious rolls, small rolls, or loaves of bread and add spices to give it a different flavor. We serve them as a dinner roll with butter, or Honey Butter during the holidays. These rolls are a favorite of the family.
Fast Rising Rolls – Base Recipe
The following is the base recipe of Fast Rising Rolls. This particular recipe makes enough dough for 24 small or 12 large rolls. You can multiply or divide the quantities to produce the number of rolls you need. Follow the recipe closely to produce a consistent bread dough. Make adjustments with seasonings to flavor it to compliment the other flavors in the meal.

Equipment
- 1 Large Mixing Bowl
- 1 Board or Silicon Mat
- 1 Baking Pan
Ingredients
- 2 Pkg Yeast: active dry
- 1/2 Cup Water: warm – about 115 degrees
- 1/4 Cup Sugar: granulated
- 6 Cups Flour: all-purpose – scooped
- 1/2 Cup Milk: dry, non-fat solids – instant or regular
- 1 Tablespoon Salt
- 2 Cups Water: warm
- 2 Eggs: beaten
- 1/2 Cup Oil: olive or vegetable – I prefer olive oil
- 1 Stick Butter – to run over the top after cooking
Instructions
- Soften yeast in 1/2 cup of warm water to which the sugar has been added.
- In a large bowl stir together flour, dry milk, and salt. Make a well in the center of the flour and add in this order the 2 cups sugar, yeast mixtures, eggs, and oil. Stir until well mixed, adding more flour, if needed, to make a soft dough.
- Cover, allow dough to rise in a warm place until it doubles, about 1 hour.
- Turn out onto a lightly floured board. Knead a few times to make the dough easy to handle.
- Pinch off smooth, round pieces about egg sized: arrange 2 inches apart in a greased baking pan.
- Cover lightly with clean towel and allow to rise for 20 minutes.
- Bake at 400 Degrees F for 10 minutes or until golden brown. Rolls/Bread should sound hollow if you gently thump the top when done.
- While still warm run a stick of butter over the top of the rolls to give them a nice shiny finish.

Fast Rising Rolls – My Way
When we have family dinners we prefer large rolls. I cook them in a 3-inch deep pan and they stick up just over the edge. Each roll is a little over 3-inches square. Splitting the roll in the middle and adding butter or Honey Butter is a favorite way to have the dinner rolls. I also like to make Italian bread using this recipe. I also use this dough to make pizzas or calzones.
Making Adjustments
Use this recipe to create a variety of different breads. Add Italian Seasoning to the recipe to make bread sticks to go with pasta dishes. Add cinnamon roll seasoning to make cinnamon rolls. You can add some cheese and spices to make an Asiago cheese bread. Adding garlic produces garlic bread. The different ways it can be used is up to you.
